As much as I LOVE fall - I've just refilled my pool, and I'm desperately grasping onto the last days of summer. One more super hot day is all I'm asking for so I can drift around on my pool noodle... does that sound weird? It doesn't matter because I know I'm not the only one hanging onto the summer heat. So, call a friend this weekend, make these insanely refreshing, low calorie green tea and mint popsicles, pop open a bottle of white wine (maybe not at the same time), and take a day to lounge by your kiddy pool. That actually doesn't sound like a bad idea, right? You're welcome.
- 1 cup of Tazo Zen Green Tea
- 1 sprig of mint
- 4 tsp of Splenda (or sweetener of your choice)
Brew tea and let cool for a few minutes. Chiffonade mint leaves. Stir in sweetener to suit taste. Mix in mint leaves. Pour into popsicle molds. Freeze for 4 hours. Remove from molds. Enjoy!
Makes 4 2 oz. popsicles.
